Let's go...
1 🍋 Dry elements: In a salad bowl, sift the flour and cornstarch, add the pinch of salt. Mix the powders well and make a well in the center of the mixture.
For a sweet version, now add the sachet of vanilla sugar!
2 🍋 We then break the first egg in the center, and mix, with a whisk, lightly and gently while remaining inside the well, gradually incorporating the flour. Break the second egg into it.
Continue to drop the flour little by little onto the edges of the well. But not all the flour, some should remain on the edges normally!
3 🍋 Once the mixture is well done, gradually pour the milk (then the water) into the center of the well, always continuing to mix gently and gently incorporating the flour which gradually falls into the well.
Whisk vigorously for one or 2 minutes so that the mixture bubbles a little, this will make the dough even lighter.
By following this technique, there will normally be no lumps. Using an electric mixer will be even more efficient, but it will do more washing up, it's up to you!
4 🍋 Let the dough rest. It will divide and thicken
5 🍋 We move on to cooking: we mix the dough a little before making the pancakes in order to link the ingredients together again.
Heat your pan (here 24cm), it should be very hot. Pour a ladle of preparation into it.
Be careful, the quantity must be balanced to completely but thinly cover the bottom of your pan .
Cook for 30/40 seconds on one side depending on your heat; the edges should be golden brown. Flip the pancake using one spatula, and cook for 30 seconds on the other.

6 🍋 Maintaining: Reserve the pancakes on a hot plate (put in the microwave for 2 minutes), covered with a cover or aluminum foil.
Toppings: Give free rein to your desires of the moment and your mood, lemon juice, sugar, applesauce and praline, hot chocolate, in short there are multiple possibilities with this one base.
